Easy Healthy Lemon Bars

Today I’m going to show you how to make lemon bars with oatmeal crust.

These light and creamy lemon bars are healthy treat you can’t resist.

They’re naturally sweetened, has no butter and no flour, but still great in texture.

HEALTHY LEMON BARS RECIPE

Ingredients:

For crust:
1 cup ground oats (or oat flour) (100g)
1/4 cup honey (85g)
1/4 cup coconut oil (50g)

For filling:
5 large eggs
1/2 cup honey (170g)
1/2 cup lemon juice (120ml)
1 tbsp lemon zest
1/3 cup ground oats (or oat flour) (35g)

Preparation:
For the crust: in the bowl, combine the ground oats, softened coconut oil and honey. Mix with the fork until the dough just comes together.

In a lined 8 by 8 inch (20 by 20 cm) baking pan spread the oat mixture, pressing with the fingers around the corners.

Bake at 350F (180C) degrees for 10 minutes. Let it cool until you make the lemon filling.

For the filling: in another bowl, beat your eggs, then add the honey, lemon juice, lemon zest and ground oats. Mix until well combined.

Pour the egg mixture over the oatmeal crust and bake at 350F (180C) degrees for 20-25 minutes, until set but still soft when gently touched.

Let it cool for 1 hour at room temperature, then place the baking pan into the fridge for 3-4 hours.

Cut in 9 equal squares (or 16 if you want smaller pieces).

Dust with the powdered sweetener, if you wish.

    Eggs are not healthy. They raise cholesterol, when you're eating 5 of them, you're definitely not going to be able to pass this off as healthy.

    For the people that want an actual healthy vegan recipe:
    make a pecan crust with pecans and dates, smash it down into the form you want with a wet spoon
    make a lemon bar mixture with lemon juice + agar agar + coconut milk / artificial sweetener
    Pour onto the pecan crust, put it in the fridge for 2 hours and voila, you made yourself some lemony goodness
    this is as healthy as it gets.

    I made this and it completely failed. The top part ended up being looking like a cake and there didn't seem to be much distinction between the crust and the lemon filling. 🙁 Will try again

    when it comes to lemon juice, stuff from a bottle is probably fine unless you're looking for a specific variety of lemon flavor. There are plenty preservative free 100% juice brands out there.

    These are NOT healthy. They may be marginally less unhealthy than normal lemon bars, but by NO means are these "healthy"
